Winter is approaching and the grocery shelves on the markets offer us more and more fall and winter vegetables. The warm winter vegetables salad below will warm you up in a winter dinner, either as a low-carb vegetarian main dish, or as a healthy side to a meat dish.

The warm winter vegetable salad is very rich in nutrients and fiber content. It has butternut squash, parsnip, carrot, red onion, garlic, and spinach in it, and it is enriched with quinoa, almond, pumpkin seeds, and olive oil. These various ingredients provide almost all vitamins and minerals needed to be taken in a meal. If you consume winter vegetable salad as a side to a meat dish, you will also have the necessary protein and fat content, and thus need nothing else.

Ingredients

  • 1 (2 pounds) butternut squash, peeled and cut into 1-inch pieces

  • 3 medium parsnips, peeled and cut into 1-inch pieces

  • 2 medium carrots, peeled and cut into 1-inch pieces

  • 1 medium red onion, peeled and cut into chunks

  • 5 garlic cloves, peeled and smashed

  • 1 teaspoon olive oil

  • Salt and black pepper to taste

  • 3 cups baby spinach

  • 1 cup cooked quinoa

  • ¼ cup chopped almonds

  • ¼ cup pumpkin seeds

  • Dressing:
  • 1 cup plain yogurt

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons chopped fresh dill

Directions

  1. Preheat the air fryer by selecting the “Vegetables” function and setting the timer to 3 minutes. Once you press the “Start/Pause” button, it will start warming up.

  2. Add butternut squash, parsnips, carrots, onion, garlic, olive oil, salt, and black pepper into a bowl and mix them.

  3. Open the air fryer, put the vegetables into the basket, and close the air fryer. If your air fryer has a rotating basket, it would be better to use it instead of a regular air fryer basket.

  4. Adjust the timer to 15 minutes, and press the “Start/Pause” button to begin roasting.

  5. Cook the vegetables until they are golden brown and tender. If you are using a regular air fryer basket, shake the basket every 5 minutes.

  6. Meanwhile, prepare the dressing by mixing yogurt, lemon juice, and dill in a bowl.

  7. Put the dressing in the refrigerator.

  8. Once the vegetables are cooked, open the air fryer and transfer them into a large bowl.

  9. Add spinach, quinoa, almonds, and pumpkin seeds into the bowl and mix them very well with the cooked vegetables.

  10. Transfer the salad into a serving bowl if you would like.

  11. Drizzle the dressing over the salad.

  12. Enjoy it!
