Chicken thighs are the most meaty cut of chicken meat. It is also the most popular one along with drumsticks. In this recipe, we are going to marinate chicken thighs with a mixture of mayonnaise, soy sauce, lemon juice, Dijon mustard, Italian seasoning and cayenne pepper for 30 minutes. This marinade improves the taste and texture of thighs so well.

Now let’s move on to the recipe below!

Ingredients

  • 2 pounds chicken thighs, skinless and boneless

  • 1 cup mayonnaise

  • 1 tablespoon soy sauce

  • 2 tablespoons lemon juice or more to taste

  • 1 ½ tablespoons Dijon mustard

  • 1 ¼ teaspoons Italian seasoning

  • ½ teaspoon cayenne pepper

  • Salt and black pepper to taste

Directions

  1. Add chicken thighs, mayonnaise, soy sauce, lemon juice, Dijon mustard, Italian seasoning, cayenne pepper, salt, and black pepper in a large zipper bag.

  2. Zip the bag and massage the marinade well onto the chicken thighs and place the zipper bag in the refrigerator for 30 minutes.

  3. After the chicken has marinated, preheat the air fryer by selecting the “Chicken” function and adjusting the timer to 3 minutes. Once you press the “Start/Pause” button it will begin warming up.

  4. Remove the chicken from the zipper bag, put it into the rotating basket or regular basket of your air fryer.

  5. Set the timer to 25 minutes and press the “Start/Pause” button to begin cooking.

  6. Cook until the chicken thighs are golden brown and reach an internal temperature of 165°F. Turn the chicken thighs halfway through cooking if you are using a regular air fryer basket.

  7. Open the air fryer, transfer the chicken thighs to a serving platter, and let them rest for 10 minutes.

  8. Serve warm.
