Strawberry cheesecake is one of the most delicious desserts which has many fans. But making cheesecake at home is a little scary because some cheesecake recipes are really challenging. The strawberry cheesecake recipe below, on the other hand, is pretty straightforward and quick. You do not spend a lot of time while making it but of course, you need to put it in the fridge for at least four hours before serving for its taste and texture to develop completely.

Let’s move on to the recipe below and serve something special to our loved ones today!

Ingredients

  • Olive oil spray

  • Crust:
  • 1½ cups graham crackers, crushed

  • 1 tablespoon granulated sugar

  • ½ stick salted butter, melted

  • Filling:
  • 1 cup granulated sugar

  • 3 (8 ounce) packs cream cheese (at room temperature)

  • ½ cup heavy cream

  • ¼ cup condensed milk

  • ½ teaspoon fresh lemon juice

  • 1 teaspoon vanilla extract

  • 2 eggs, cracked into a bowl

  • 1 cup strawberry puree, mixed with 2 tablespoons powdered sugar

  • Topping:
  • Fresh strawberries, hulled, whole or halved

Directions

  1. Preheat the air fryer by setting the temperature to 325°F and the timer to 3 minutes. Once you press the “Start/Pause” button, it will start warming up.

  2. Grease an 8-inch springform pan with olive oil spray and set it aside.

  3. Add sugar, graham crackers, and butter in a bowl and mix them well.

  4. Pour the mixture into the springform pan, and press it to fit the bottom of the pan by using a glass tumbler. This will be cheesecake crust. You may make it with or without a wall.

  5. Place the crust into the refrigerator while you are making the filling.

  6. Add cream cheese and sugar into a bowl, and whisk them until smooth using a flat beater.

  7. Add heavy cream, condensed milk, lemon juice, and vanilla into the bowl, and mix them as well until smooth.

  8. Add eggs into the same bowl and beat evenly.

  9. Finally fold in strawberry puree with sugar until well combined. You can skip this step if you are planning to top the cheesecake with strawberry jam.

  10. Remove the springform pan from the refrigerator and pour the filling onto your homemade graham cracker crust.

  11. Gently hit the pan on a solid flat surface a few times to release air bubbles from filling.

  12. Open the air fryer, insert the springform pan into it, and close.

  13. Set the timer to 20 minutes, and press the “Start/Pause” button to begin baking.

  14. Once the cheesecake is cooked, remove the pan and let it cool for 10 minutes.

  15. After 10 minutes, place the cheesecake in the refrigerator for at least 4 hours.

  16. When ready to serve, remove the cheesecake from the refrigerator, release the springform pan from the cake, and garnish with strawberries.

  17. Slice and enjoy the strawberry cheesecake!

    You can use pre-made cheesecake crust sold in stores in this recipe instead of making graham cracker crust but homemade crust will taste more flavorful.
