Coconut mochi is a Japanese sweet made with sweet rice flour and coconut. It is very similar to Hawaiian butter mochi but tastes lighter. Once eaten exclusively by Asian emperors and nobles, coconut mochi is now very popular among all people with its delicious chewy texture and light taste.
Coconut mochi is traditionally made round by hand as you see in the picture above, but in this recipe tailored for a bread maker, we will cut our mochi into squares and save time and energy.

Ingredients
3 eggs
1½ cups milk
4 tablespoons butter
1¼ cups sugar
1½ cups sweet rice flour
½ teaspoon baking powder
½ teaspoon vanilla
1 cup sweet shredded coconut
Directions
Open the lid of the bread maker and remove the pan from the machine by pulling it upward.
Make sure the pan is clean and both kneading paddles are in place.
Add all of the ingredients to the bread pan and stir them.
Put the bread pan back in the bread machine pressing it down so that it clicks into its place, and close the lid.
Plug the bread machine into an outlet and press the “Power” button to turn the machine on.
Use the “Program” button to select the program #8 for the cake cycle.
Press the “Start” button to start the cake making cycle.
The machine will let you know by making a beep sound once the cake making cycle is finished. Open the lid at this time and remove the bread pan out by using a pot holder.
Let the coconut mochi cool in the pan for about an hour, then flip it over onto a cutting board, and remove the kneading paddles if they are stuck in the mochi.
Cut the coconut mochi into squares and serve.

You can store coconut mochi in the refrigerator for up to 5 days. If it becomes hard in the refrigerator, you can reheat it in the air fryer at 400 degrees Fahrenheit for 5 minutes and it will return to its original taste and texture.
