Ingredients

  • 3 cups cauliflower florets

  • 3 cups broccoli florets

  • 1 large carrot, cut into chunks (optional)

  • 2 tablespoons olive oil

  • ¼ teaspoon lemon pepper

  • ½ teaspoon garlic powder

  • ¼ teaspoon paprika

  • ¼ teaspoon turmeric powder

  • Salt to taste

  • ½ lemon, juiced

Directions

  1. Preheat the air fryer by selecting the “Vegetables” function and setting the timer to 3 minutes. Once you press the “Start/Pause” button, it will start warming up.

  2. Add cauliflower, broccoli, olive oil, garlic powder, lemon pepper, paprika, turmeric, and salt into a bowl and mix them.

  3. Open the air fryer, put the vegetables into the basket, and close the air fryer. If your air fryer has a rotating basket, it would be better to use it instead of a regular air fryer basket.

  4. Adjust the timer to 15 minutes, and press the “Start/Pause” button to begin roasting.

  5. Cook the vegetables until they are tender. If you are using a regular air fryer basket, shake the basket every 5 minutes.

  6. Once cooked, open the air fryer and transfer the vegetables in a serving bowl.

  7. Drizzle the lemon juice over the cauliflower, broccoli and carrot mixture and mix them well.

  8. Serve warm and enjoy!
