What is the difference between pizza dough and bread dough?

In fact, there is no big difference between pizza dough and bread dough. They use almost the same ingredients but, originally, pizza dough flour contains higher protein than bread dough. However, you can safely use bread dough to make pizza and vice versa.

Why do I need to use water at room temperature to make pizza dough?

Because the yeast performs best at room temperature. Cold water does not activate bacteria in the yeast whereas hot water kills them.
