Can I freeze meatloaf?
Yes. You can prepare meatloaf in advance and freeze it in an airtight container or freezer bag. You do not have to thaw it for cooking if you have already formed it into a shape of loaf before freezing.
What can I do with meatloaf leftovers?
You can store them in an airtight container in the refrigerator for up to 5 days. Meatloaf slices are great to make sandwiches for lunch. You can also freeze them to consume much later. If you slice the meatloaf before freezing, then you can reheat only as many slices as you need.

Meatloaf is a meat dish made with ground beef combined with other ingredients such as onion, garlic, eggs, breadcrumbs etc., formed into a shape loaf, and baked. The original meatloaf recipe is made with ground beef but ground lamb, pork, chicken, and even seafood can also be used to make meatloaf. There are also vegetarian meatloaf recipes made with imitation meat or ground legumes.
Meatloaf gets dry easily while cooking so it is usually glazed with some sauces, eggs, or breadcrumbs, or, as in the recipe below, wrapped in bacon to help it stay moist. Making meatloaf in the air fryer will help it become moist as well since it will cook more quickly in the air fryer than in the oven.
Let’s move on to the recipe below so as not to lose time to prepare dinner!
Olive oil spray
8 bacon slices
2 pounds ground beef
½ cup plain breadcrumbs
½ cup milk
2 tablespoons Worcestershire sauce
2 eggs, cracked into a bowl
4 garlic cloves, pressed
1 teaspoon garlic powder
2 tablespoons Italian seasoning
Salt and black pepper to taste
1 cup ketchup
Preheat the air fryer by setting the temperature to 400°F and the timer to 3 minutes. Once you press the “Start/Pause” button, it will start warming up.
Cut a large piece of foil and grease it with olive oil spray.
Lay out the bacon slices on the foil close to each other to act as a bed for meatloaf.
Add ground beef, breadcrumbs, milk, Worcestershire sauce, eggs, garlic paste and powder, Italian seasoning, salt, and black pepper into a bowl and mix them.
Form the mixture into a 2-inch thick loaf and put it over the bacon slices leaving 2-inch pieces of the bacon to go over the meatloaf on both sides. You can use a loaf pan to give the mixture a loaf shape if you need.
Wrap the bacon slices over the meatloaf, brush it with ketchup, and cover tightly with foil.
Place the meatloaf on a tray and put it in the air fryer.
Set the timer to 20 minutes and press the “Start/Pause” button to start baking.
Cook it until the meatloaf is brown and it reaches an internal temperature of 165°F.
Once cooked, open the air fryer and transfer the wrapped meatloaf to a serving platter.
Let it rest for 10 minutes before opening and slicing.
RECIPE NOTE FOR BACON WRAPPED MEATLOAF:
You can also add grated cheese or carrot to the meatloaf mixture. They will enhance the flavor and nutritional value.
Do not overmix the ingredients while making meatloaf because overmixing will result in a dense meatloaf. As soon as the ingredients are mixed, stop mixing anymore.
HOW TO SERVE BACON WRAPPED MEATLOAF:
You should serve meatloaf by slicing it like a loaf of bread. You can top the slices with some sauce such as this tomato sauce you can easily make in your bread machine.
Bacon wrapped meatloaf itself is already a very filling dish. So, it would be better to serve it with light side dishes such as vegetables or green salad to have a meal not too heavy. Rice and pasta goes great with bacon wrapped meatloaf but you feel heavy after eating them with meatloaf since they are high carb side dishes.
